I have been trying to eat healthily this summer by substituting food I would normally eat, such as chocolate, with more healthy options. This is one of the snacks I have been making – it takes just five minutes (or less) to make, is healthy, filling and really tasty!
Read on to see how I make my sweet wholegrain rice and corn cakes with berries and yoghurt!
For this quick and healthy snack I used Kallo’s Blueberry and Vanilla Wholegrain Low Fat Rice and Corn Cakes (35 cals each). These are readily available from most supermarkets. I then added some low fat strawberry yoghurt and spread it evenly over the rice and corn cakes. Finally I put a handful of frozen raspberries over the top of the yoghurt and that’s it – done!
